Wine inspiration: Small bubbles, great pleasure.
Viniication: Produced using the ancestral method, the oldest way of making sparkling wine, relying only
on the quality of the grapes. The grapes are handpicked at the beginning of September, followed by gentle pressing. The grape juice is spontaneously fermented in stainless steel tanks. Hand-bottles before the end of the process, allowing the fermentation to complete in the bottle to reach the desired level of effervescence. Each bottle is disgorged before release to remove the yeast sediment.
